Kelp (Ascophyllum nodosum) is large brown algae seaweed that grows in relatively shallow ocean areas. It sometimes forms underwater kelp “forests” where fish and other sea life live. Kelp is thought to have been in existence for more than 5 million years and thrives best in 42-57°F water that is nutrient-rich. Kelp, which grows quickly, has long, flat leaf-like blades, which come out from long stem-like structures.
Aside from being a rich source of iodine, kelp is a good source of vitamins A, B complex, D, E, K, dietary fiber and essential fatty acids. It also contains calcium, sulfur, iron, phosphorus, sodium, potassium and magnesium.*
